The simplest way to appreciate most types of pork-based game pâté is to spread it chilled on hot toast and then top with sliced cornichons (small, pickled gherkins). An ideal accompaniment for this tasty, coarse-cut duck pâté would be sliced, blanched potatoes sautéed in duck fat until light brown along with lardons (bacon cubes), mushrooms, a slither of garlic, salt and pepper.
